Shallow Fried Breaded Salmon Cake server with Chilli Mango Salsa

Chilli Mango Salsa

 Fresh Mango  2 Nos
 Onion Chopped  1 Nos
 Red Chilli Chopped  2 Pcs
 Fresh Coriander Leaf Chopped  50 Gm
 White Wine Vinegar  15 Ml
 L & P Sauce  5 Ml
 Fine White Sugar  20 Gm
 Salt & Pepper  To Taste
  1. Cut the Mango into small dice, fine chop all ingredients
  2. In a mixing blow, whisk in the vinegar, sugar and L & P sauce together, add in mango, onion, chilli, coriander, use a spoon to mix well add in salt and pepper to taste.
  3. Rest in fridge for few hour before sever.

Salmon Cake

 Fresh salmon  500 Gm
 Mash Potato  500 Gm
 Yellow Onion Chopped 2 Nos
 Salt & Pepper  To Taste
 Fresh Egg  4 Nos
 Flour  200 Gm
 White Japanese Bread Crumb 500 Gm
  1. Lightly  chopped the salmon into small chunk
  2. In a pan cook the salmon and cool down.
  3. In a Mixing Blow add in the cooked salmon, mash potato and the chopped onion mix well seasoning to taste.
  4. Make into cake size about 60 each cool it in the chiller for 2 hour before coat with bread crumb.
  5. Prepare 3 Tray, first tray add in the plain flour,  second tray whisk the egg together, third tray Japanese bread crumb.
  6. To breaded the Salmon cake first in the flour than to the egg wash  after that in the bread crumb nicely cost with crumb.
  7. Shallow fried the salmon cake from one side than the to other side still golden brown.
  8. Sever with chilli mango salsa.
  9. Tip for the balsamic glaze can buy from supermarkets.
