Penne Seafood Tomato Sauce Pasta

Canned peeled & Chopped Tomato Sauce 2 Can about 500 gm a can
Fresh Ripe Tomato 1 kg
Dried Bay Leaf 2 pcs
Dried Rosemary 1 Teaspoon
Dried Thyme 1 Teaspoon
Dried Oregano 1 Teaspoon
Fresh Basil 50 Gm
Onion Sliced 2 Nos
Butter 100 Gm
Sugar White 2 Tablespoon
Chopped Garlic 1 Tablespoon
Cooking Oil 100 Ml
Salt Fine 1 Tablespoon
Freshly Ground Black Pepper 1 Teaspoon
  1. Bring a pot of water to a boil. Have ready a large bowl of iced water. Plunge whole tomatoes in boiling water until skin starts to peel, about 1 minute. Remove with slotted spoon and place in ice bath. Let rest until cool enough to handle, peel of the skin. Cut into wedge with seed on.
  2. Heat up a large pot at medium heat, cook onion and garlic in oil and butter until onion starts to soften, 5 minutes, add in the tomato cook for 5 minutes. Pour in can chopped tomato, basil, thyme, rosemary, oregano and bay leaf. Bring to a boil, then reduce heat to low, cover and simmer 2 hours. Season with salt, pepper and sugar. Discard bay leaf.
  3. Blend the tomato sauce with hand blender till smooth. Back to the pot bring it to boil. Cool Down and keep
  4. Tip tomato sauce will keep well in the fridge for about a week.

Penne Seafood tomato pasta

Sever 5 to 6 pax 

Penne Pasta 1 pkt
Fresh Prawn 400 Gm
Fresh Squid 400 Gm
Green Mussels 10 Nos
Dried Oregano 1/4 Teaspoon
Salt Fine 1 Tablespoon
Freshly Ground Black Pepper 1/4 Teaspoon
Olive Oil 100 Ml
Butter Soft 80 Gm
Tomato sauce 1.2 Lt
Chopped Garlic 1/2 Tablespoon
White Cooking Wine 100 Ml
  1. Bring a large pot of water to a boil, add in 1 tablespoon of salt and 50 ml of olive oil than add in the  penne pasta.

  4. Drain the pasta. set a side to cool add some olive oil to it so it won’t stick together.
  5. Cut the squid to ring size about 1/4 inch, peel off the prawn shell and wash all seafood.
  6. Heat up a pan at medium heat, add in olive oil when it shimmers, add in chopped garlic sautéed till lightly brown, add in all seafood and dried oregano sautéed for 30 sec add in white cooking wine sautéed for 30 sec add the cooked penne pasta sautéed for 30 sec add in the tomato sauce, bring to shimmers season to taste add in butter stir well and it ready to sever.
